Is there any better way of playing AA here ? Folding seems a bit harsh. Stop & go would work better on the actual hand but would give up fold equity against opp drawing to trips etc. Is this just a bad beat or do the chip modellers have anything to offer ?
There's no way out - the chump overplaying the AK is going to call you no matter what you do, and very probably all-in even if you try to limp. Personally given the stack sizes I'm probably going all-in straight away rather than 3x raising, but 99% certain it wouldn't make any difference.

Its a recurring (and probably inevitable) theme - getting wiped out with an overwhelmingly best hand when an unlikely procession of cards gives them a straight or flush by the river. Is there a balance where you let them see a flop which is crap for them so they get a chance to fold. Which outweighs getting it all in with a monster pre-flop ? (In tournaments obviously)
Both hands destined to get it all in pre-flop with those stack sizes.

"on the bubble"? Unless the cash is huge for the last placed cash payout (which is highly unlikely) remember that you are still trying to win the tourney, not just get your money back. I'd have been over the moon holding aces with someone calling my all-in. How else are you going to double up and aim for first place? Pre-flop you have the best hand and as we have discussed numerous times on here, you just can't fold aces preflop. Although it doesn't feel like it, you were very lucky to get all your chips in.
Oh, don't mind me, my prejudice is showing - AK overplayers are my poker pet hate. I like to think I'd have the balls to fold it in this situation, but I probably wouldn't.
